Primal Superfoods for Fertility and Pregnancy. This is a guest post from Chris Kresser of Chris. Kresser. com. As a clinician with a special interest in fertility and pregnancy nutrition, two of the most common questions my patients ask are: Is a Paleo/Primal Blueprint diet safe during pregnancy? What are the most important foods to eat for boosting fertility and ensuring a healthy pregnancy? I’m going to answer these questions in this article. But before I do, let’s first take a moment to discuss the importance of proper nutrition for fertility and pregnancy. Numerous factors determine our health as adults, including nutrition, exercise, lifestyle and genetics. But recent research suggests another powerful influence on lifelong health: our mother’s nutritional status during (and even before) her pregnancy. In fact, some researchers now believe the 9 months we spend in the womb are the most consequential period of our lives, permanently influencing the wiring of the brain and the function of organs like the heart, liver and pancreas. They also suggest that the conditions we encounter in utero shape everything from our susceptibility to disease, to our appetite and metabolism, to our intelligence and temperament. We’re only as healthy as our mother’s womb. The theory that the nutritional environment we encounter in the womb determines our lifelong health is known as the Developmental Origins Hypothesis. It was first proposed by British researcher David J. Barker in the 1. 98. British prosperity increased, so did heart disease. Yet geographically, the highest rates of heart disease were found in the poorest places in Britain. Barker found that rather than smoking, dietary fat or some other lifestyle cause, the factor that was most predictive of whether an individual would develop premature heart disease (before the age of 6. If you do a quick search on Pub. ![]() ![]() ![]() ![]() ![]() ![]() Med for “developmental origins of disease”, you’ll find references to the fetal origins of cancer, heart disease, allergies, asthma, autoimmune disease, diabetes, obesity, mental illness and degenerative conditions like arthritis, osteoporosis, dementia and Alzheimer’s. The following list is just a small sampling of the literature on the subject: The metabolic syndrome. In a 2. 01. 1 paper, Bruce et al showed that the onset of metabolic syndrome is “increasingly likely following exposure to suboptimal nutrition during critical periods of development”. Heart disease and diabetes. In a 2. 00. 2 paper, Barker (the “father” of the Developmental Origins hypothesis) showed that slow growth during fetal life and infancy – itself a consequence of poor maternal nutrition – predisposes individuals to coronary heart disease, type 2 diabetes and hypertension later in life. Breast cancer. In a 2. Hilakivi- Clarke, et al. In a 2. 00. 7 paper, Dumesic et al. In a 2. 00. 8 paper Kalliomaki et al. This leads us to the obvious conclusion that proper maternal nutrition is crucial for boosting fertility and ensuring lifelong health for our children. But what is proper maternal nutrition? And is the Primal Blueprint diet you’ve come to love safe during pregnancy? If you listen to the mainstream authorities, they’ll tell you the best diet during pregnancy is one that’s rich in whole grains and low in fat and animal protein. Some of my patients have even been told by their previous physicians or nutritionists that it’s dangerous not to eat grains during pregnancy! Sound familiar? This is the same misguided advice dietitians have been giving to the general public for decades – and it’s just as wrong for aspiring parents and pregnant moms. ![]() The BMI (Body Mass Index) is used by the medical profession to quickly and simply determine a person's weight in regard to their height. From a straight forward. Fertility awareness is a collection of methods using your body’s natural functioning to determine the days of the month you are most likely to get pregnant. Although she was but forty-five, some obscure disease had taken the fire out of her figure. WebMD experts and contributors provide answers to your health questions. Let’s break out that trusty analytical tool called “common sense” to combat the notion that the Primal Blueprint diet isn’t safe during pregnancy, and that it’s somehow dangerous not to eat grains during pregnancy. If that were true, we wouldn’t even be having this conversation. Because humans have eaten a paleolithic diet (without grains) for the vast majority of our evolutionary history. Imagine the timeline of human existence as a football field (1. If you started walking at one end of the field, the first 9. During those first 7. It’s only in the last one- half yard that agriculture was developed and humans started regularly consuming grains. Perhaps the more appropriate question is whether the Standard American Diet is safe. Infertility rates are already high, and they’re increasing at an alarming rate. U. K. While there are probably several reasons for this dramatic increase in infertility, the Standard American Diet is almost certainly one of the most important. How can you supercharge your fertility and ensure a healthy pregnancy and lifelong health for your baby? The Primal Blueprint diet is an excellent starting place for those wishing to conceive, or for women who are already pregnant or nursing. But within the context of the Primal Blueprint diet, there are certain foods and nutrients that are particularly beneficial during these periods. Traditional cultures have known this for millennia. That’s why they have sacred fertility foods they feed to mothers- to- be and even fathers- to- be. These include nutrient dense foods like fish eggs, liver, bone marrow, egg yolks and other animal fats. For example, the Masai tribe in Africa only allowed couples to marry and become pregnant after spending several months drinking milk in the wet season when the grass is lush and the nutrient content of the milk is especially high. With this in mind, here are the top 5 “superfoods” I recommend for fertility, pregnancy and breastfeeding. Liver. Ounce for ounce, liver is one of the most nutrient- dense foods on the planet. It’s loaded with fat soluble vitamins like retinol (pre- formed vitamin A) that are crucial for reproductive health, and difficult to obtain elsewhere in the diet. Liver is also a great source of highly absorbable iron, which helps prevent miscarriage and maternal anemia, and B1. DNA. Liver is also a good source of bioavailable protein, zinc, and folate. Egg yolks. Like liver, egg yolks could be considered “nature’s multivitamin”. But they are especially rich in a nutrient many people have never heard of: choline. Studies suggest that 8. This is significant because choline helps protect against neural tube defects. It also plays an important role in brain development, helping to form cholinergic neurons and the connections between these neurons that are so crucial in the first few years of life. Cold- water, fatty fish*. Seafood is the exclusive food source of the long- chain omega- 3 fats EPA and DHA. DHA is particularly important for fertility and pregnancy. It is preferentially incorporated into the rapidly developing brain during pregnancy and the first two years of infancy, concentrating in the grey matter and eyes. It’s also crucial to the formation of neurons, which are the functional cells in the brain, and to protecting the brain from oxidative damage. Salmon, mackerel, herring and sardines are excellent sources of DHA. Cod liver oil. Yep, grandma was right! Cod liver oil is a sacred fertility and pregnancy food that fell out of favor during the last couple of generations, but is making a comeback. It’s one of the highest dietary sources of vitamin A, which we discussed above. It has more vitamin D per unit weight than any other food. Vitamin D is crucial to fertility and pregnancy, and studies show that up to 5. Vitamin D promotes proper development of the bones, especially during the 3rd trimester when the fetal skeleton begins to grow rapidly. Cod liver oil is also a good source of the long- chain omega- 3 fats EPA and DHA. Grass- fed dairy. While dairy is not strictly a Primal food, it’s a great choice for fertility and pregnancy for those who tolerate it well. Dairy is rich in saturated fat, which is especially beneficial for fertility. It’s also a good source of the fat- soluble vitamins (A, D, K2 & E) and a healthy, natural trans- fat (not to be confused with artificial trans- fats, which are harmful) conjugated linoleic acid (CLA). Fermented dairy products – like yogurt and kefir – are also great sources of beneficial bacteria. This is important because a baby’s first exposure to bacteria is in his/her mother’s birth canal, and the mother’s gut health has a significant influence on the lifelong health of her baby.*Some women are scared to eat fish during pregnancy because of concerns about mercury levels. It turns out those concerns have been overblown. Read this article for more information. Want to supercharge your fertility and promote lifelong health for your baby? Check out the Healthy Baby Code. The diet consists predominately of fresh fruit, vegetables and lean meat with only 3 meals per day - no food or snacks in between. Particularly with respect to fruits and vegetables, certain parts of the menu allow you to eat as much of a particular food as you would like. Strict menu of foods results in choices that aren't all that appealing and tasty to most people though the high protein component of the diet aids in a feeling of fullness and satisfaction. However a primary reason why the diet may be difficult for many people is, just like many other diets, it concentrates predominately on food restrictions with little regard for food enjoyment. Funnily enough nearly every meal for a week recommends coffee or tea, perhaps because the caffeine content contributes to a temporary increase in metabolism. Of course this ignores the negative side effects associated with caffeine. The Scarsdale diet also recommended drinking at least 8 glasses of water per day which is easily the minimum any person would be recommended to drink. ![]() The Scarsdale diet claims the ability to help people lose an average of one pound per day. This is probably an over optimistic and unhealthy weight goal. How Does it Work? The diet plan yields about 1000 calories a day which can lower metabolism so when you come back to normal eating, you regain weight even quicker. It is no secret that water is beneficial to flushing the system of toxins and aiding in weight loss in general. The following is an example of a typical day on the Scarsdale diet plan. However, it is unlikely that a person would be able to effectively do this much physical activity given the low calorie intake. The calorie intake is one reason many critics slam the diet, because it is so low and perhaps not enough to function optimally let alone carry out various forms of exercise. The original Scarsdale approach isn't followed much these days but there are variants of the diet that are more suited to modern nutritional beliefs. Originally as the diet was only recommended to be followed for a total of two weeks, Dr. Tarnower then suggested that it be followed by his keep trim programme, which although not quite as strict as the Scarsdale component (containing more calories), still banned many foods. ![]() Food, Digestion and Balanced Diet. Natural Options for Dry, Flakey Skin and Eczema. By Dr. Mercola. Dry skin can feel tight, itchy and generally uncomfortable, but for many the symptoms they despise the most are the aesthetic ones. Flaking, scaling, peeling, redness, roughness and even the appearance of fine lines and cracks can make dry skin rather unsightly, especially during the summer months when you probably want to bare more skin than usual. If you have problem skin such as dry skin or eczema, you'll likely find that the best solutions tackle the problem from the inside out. Are they smooth and soft? If not, or if other areas of your skin are dry, flaking or cracked, there is a good chance they are not getting enough beneficial omega- 3 fats. Omega- 3 fats help to normalize your skin fats and prevent dehydration in your cells. This keeps your skin cells strong and full of moisture, which can help to decrease the appearance of fine lines. Fatty- acid deficiency can manifest in a variety of ways, but skin problems such as eczema, thick patches of skin, and cracked heels are common. ![]() ![]() There are many different types of eczema that produce symptoms and signs ranging from oozing blisters to crusty plaques of skin. Fish has always been the best source for the animal- based omega- 3 fats EPA and DHA, but as levels of pollution have increased, this treasure of a food has become less and less viable as a primary source of these healthful fats. This includes: Sardines Anchovies Herring That said, if you're suffering from dry skin, an omega- 3 fat supplement, such as krill oil, may be highly beneficial. Atopic dermatitis, a type of eczema, is more than just a skin problem, as it is an indication that there is a problem with your immune system and also has inflammatory and allergenic components. For instance, it's been found that in people with eczema: The skin barrier is altered so that water escapes while environmental allergens are allowed to enter, resulting in itchy, dry patches. The skin lacks normal amounts of cathelicidin, a natural antimicrobial that helps protect skin from infections as virulent as MRSAA protein called claudin- 1 is weakened, allowing the skin cells to become leaky and permeable to environmental allergens and infectious agents. Natural Options for Tackling Eczema. Steroids are often recommended for treating the inflammation that may underlie eczema flare- ups, but omega- 3 fats, as mentioned above, can be effective in this regard without side effects. Further, the latest research suggests that limiting sugar and supplementing with fermented foods or beneficial probiotic bacteria can cut the risk of developing eczema in half. The beneficial bacteria in your gut has actually been found to help prevent allergies by helping your immune system to distinguish between pathogens and non- harmful antigens and respond appropriately – and this may be one reason why they also appear so beneficial for eczema. Whatever you do, don't make the mistake of applying unnatural moisturizers that likely contain chemical ingredients that will further irritate your skin. Pure emu oil, coconut oil or our organic body butter are alternatives that can provide moisture without chemical additives. Other simple tips for helping to minimize eczema flare- ups include: Minimize stress in your life, which can further promote inflammation and eczema. Shower shortly after heavy sweating, as sweat can trigger eczema outbreaks. Check for unrecognized food allergies, which can sometimes manifest as eczema. Avoid exposure to irritating detergents, soaps and other substances, which can cause contact eczema. Two Top Food Groups That Prematurely Age Your Skin. When talking about skin appearance, factors like excessive sun exposure, smog and cigarette smoking are often blamed, but what you eat plays a major role as well. The following foods are among the worst for your skin, and avoiding them may help you minimize wrinkles and promote youthful- looking skin. Sugar, Fructose and Grains. This is probably the single most important step you can take to improve your skin health. If you eliminate all sugars, fructose and grains from your diet for a few weeks there is a major likelihood you will notice rapid improvement in your complexion. This is largely because sugar feeds pathogenic bacteria, fungi and yeast and will disrupt your optimal gut flora, which is one of the primary keys to healthy skin. Fructose in particular is an extremely potent pro- inflammatory agent that creates advanced glycation end products (AGEs), which are a complex group of compounds formed when sugar reacts with amino acids. It's a fitting acronym because – along with oxidation – it's one of the major molecular mechanisms whereby damage accrues in your body, which leads to disease, aging, and eventually, death. Sugar/fructose also increases your insulin and leptin levels and decreases receptor sensitivity for both of these vital hormones, and this is another major factor of premature aging body- wide, including of your skin. Fried, Grilled and Broiled Foods. When food is cooked at high temperatures—including when it is pasteurized or sterilized—it increases the formation of AGEs in your food. AGEs build up in your body over time leading to oxidative stress, inflammation and an increased risk of heart disease, diabetes and kidney disease. Eating your food raw, lightly cooked or using cooking methods that involve lots of water, such as steaming or poaching, can help reduce the AGE- creation process. That said, as mentioned some foods are particularly effective at promoting beautiful, clear, healthy skin, including: Animal- based omega- 3 fats. Vegetables: Ideally fresh, organic and locally grown. Fresh vegetable juice is also wonderful for your skin, as are carotenoids, which give red, orange and yellow fruits their color, and also occur in green vegetables. Studies have shown that eating foods with these deeply colored pigments can make your face actually look healthier than being tanned. Fermented vegetables are even better as they can start with the same vegetables but are converted by bacteria to superfoods, which help promote the growth of friendly intestinal bacteria and aid in immune balance and digestion. Astaxanthin—a potent antioxidant—has been found to offer effective protection against sun damage when taken as a daily supplement. Some sunscreens are also starting to use astaxanthin as an ingredient to protect your skin from damage. For instance, one study found that commonly used moisturizing creams containing mineral oil are tumorigenic when applied topically to mice. What this means is that these creams and lotions can increase the rate at which skin tumors form. The study tested four common skin lotions: Dermabase Dermovan Eucerin Original Moisturizing Cream Vanicream Mineral oil has actually been linked to no less than 2. So one of the easiest ways to ensure that you're not being exposed to potentially hazardous agents is to simply make your own personal care products, using simple all- natural ingredients that many of you may already have in your home. Both can be used for facial and body moisturizers and lotions. Coconut oil has been used to moisturize skin for ages, and is also a potent source of the beneficial fat lauric acid. A 4- Step Shower Routine for Tackling Dry Skin. Once you've addressed the dietary changes above, you may find that your dry skin clears up. If not, you might want to have your thyroid checked out, or you may just need a bit of extra help. The following routine can help you to remove excess flakes to reveal the glowing skin underneath: Use a body brush to get rid of flakes (do this on your dry skin, before getting wet)Avoid using soap or use the least amount possible, especially in the winter or in dry climates, as that will tend to worsen your dry skin. Instead, apply a natural body scrub to exfoliate your skin (also apply this to your skin before getting wet, and choose one that also contains oil to moisturize)After your shower, apply a heavy natural body butter or natural moisturizing oil (not mineral oil or baby oil) to help seal in moisture. In this exciting, let me explain a very important phenomenon that serves as the cornerstone of any diet plan or weight loss program and, that is, appetite suppression. However, before you fully understand this term, let me first define some basic terms that are directly related to appetite suppression: What is appetite? While appetite is a general and broader term used in many contexts, it commonly refers to the appetite for food. An appetite can be defined as the natural desire or impulse to eat or consume food. The link between weight gain and appetite. Here, let me tell you another interesting fact. In general population, appetite is almost always “directly proportional” to the amount of calorie consumption (calorie intake). This means that the stronger will be your appetite; greater will be the calories that you would consume. As a result of this increased calorie intake, you will eventually end up gaining weight. However, you must remember that increased appetite is not always the sole reason of people being overweight or obese. What is appetite suppression? Appetite suppression can be defined as the process that tends to reduce or decrease your desire to eat more. What is an appetite suppressant? An appetite suppressant can be defined as any food (including vegetables or fruits), substance, drink, pill or diet that will either reduce or completely block or inhibit your natural desire to eat more (hunger) or would simply curb your appetite. Contrary to the popular belief, appetite suppression does not mean “complete hunger blockage” as that would be unnatural and, rather serious and fatal for your vital organs and the body. Instead, appetite suppression simple means “controlling or managing” your desire to eat more by natural or artificial means. This can be accomplished in two different ways: Appetite reduction: It works by reducing, inhibiting or decreasing your desire to eat more. Appetite satiation: It works by increasing, enticing or increasing your feeling of fullness. ![]() ![]() ![]() ![]() Hence, the net result of both ways is always the same i. My answer is always the same; your appetite is not exclusively controlled by your stomach. In fact, it’s your brain that mainly controls your desire to eat. Therefore, all appetite suppressants work by controlling the release or secretion of certain chemicals from your brain (hormones) called “neurotransmitters”. Once released from your brain, these neurotransmitters, in turn, give rise to the feeling of the so called “hunger pains” in your stomach. ![]() Their levels in the blood will tell your appetite center in the brain (a form of negative feedback) whether you should eat more or less. Conclusion. Last but not least, before choosing the best appetite suppressant, you should first ask yourself, what is the main reason that makes you fat? If this is your controllable desire to eat more (increased appetite), a safe and natural appetite suppressant can present the best solution to your problem. Fortunately, there are quite a few good criteria that would help you choose the most suitable, safest and effective appetite suppressant based on your dietary habits, lifestyle and preferences for foods. Atkins Diet Review - Weight Loss Resources. By Dietitian, Juliette Kellow BSc RDUnless you’ve been living on Mars, chances are you’ve heard of the Atkins diet – and probably know someone who’s tried it, if you haven’t done so yourself. After all, it’s a diet that sounds too good to be true. To shift those pounds quickly you simply need to start the day with bacon and eggs, snack on chunks of cheese, top coffee with cream and feast on steaks fried in butter. Not exactly the typical foods you’d find on the shopping lists of most slimmers who’ve grown up with the idea that a low- fat diet is the best way to lose weight. But like all things that sound too good to be true, there’s a catch. And in the case of the Atkin’s diet, it means that filling up on high- fat foods needs to be balanced by giving up most carbs including bread, potatoes, pasta, rice, chocolate, crisps, biscuits, cake – even fruit, milk and some veg in the early stages. Nevertheless, the Atkin’s diet has captured the hearts – and tastebuds – of everyone from A- list celebs such as Jennifer Aniston and Renee Zellweger to business men, teachers and housewives. ![]() The Tools You Need To Succeed. Brits were estimated to have tried the diet in an effort to shape up and slim down. ![]() In spite of this, the Atkins Diet has caused the biggest weight loss debate in years, generating almost as many column inches as advocates of the diet have claimed to lose from their waistline. And even today, nutrition experts have still not been won over. Here’s the lowdown. Dr Atkins' theory is really quite simple: when you cut out carbs, your body is forced into burning its fat stores to provide it with energy; as you burn more calories when your body burns fat compared with carbohydrate, you'll lose weight more quickly; by cutting out carbs, blood sugar levels remain more stable throughout the day, and so prevent overeating. How does the Atkins Diet work? There are four phases to the Atkins diet. The first phase is called Induction, which must be followed for at least two weeks, although this phase can be continued for much longer if you can bear it! During Induction, you must severely limit your intake of carbohydrate to a tiny 2. As well as avoiding carb- rich treats such as biscuits, cakes, chocolate, crisps, fizzy drinks, croissants and pastry, this also means ditching bread, potatoes, pasta, rice, milk, fruit and most veg from the menu. In contrast, you can eat unlimited amounts of red meat, chicken, fish, cheese, eggs, mayo, cream and butter. It’s during the Induction phase that your body switches from burning carbs to burning fat and blood sugar levels stabilise. The second phase, known as Ongoing Weight Loss, allows you to slightly increase your carb intake – by 5g daily for a week at a time – until you find your Critical Carbohydrate Level for Losing Weight. This is the maximum amount of carbohydrate you can eat each day to lose between 1 and 3lb a week. For some people, this may only be 2. Nevertheless, it’s still considerably lower than most of us are used to and really only allows for the introduction of a few more veggies, fruits, nuts and seeds. Bread, potatoes, rice, pasta and breakfast cereals are still off limits! It’s time to enter phase three, called Pre- maintenance, once you have just 5- 1. During this phase, you increase you carb intake by 1. The idea is to slow down your weight loss to no more than 1lb a week in an effort to prepare your body for the final phase, weight maintenance. By now you can start to include tiny amounts of traditional starchy foods such as porridge, bread and pasta – and we are talking tiny amounts! For example, just 4. The fourth and final phase, Lifetime Maintenance, aims to help you maintain your weight. While you can have a slightly more varied carbohydrate intake, most people need to limit carbs to less than 9. The result: you’ll be following a low- carb diet for life. So how much weight can I expect to lose? Dr Atkins claims you can expect to lose 6- 1. Induction, which should slow to 1- 3lb a week once you enter the Ongoing Weight Loss Phase. During Pre- maintenance, you can expect to lose 1lb a week at most. I keep hearing about . What are these? Not all carbohydrates can be digested by the body. Fibre, for example, passes through the body without affecting blood sugar levels. The Atkins diet focuses on those carbohydrates that can be digested and therefore affect blood sugar levels. The . In the UK, this is equivalent to the carbohydrate content given in the nutrition information chart on food packaging. I’ve noticed there are loads of low- carb products available. Should I try them? The availability of low- carb products has grown tremendously in the past few years and you can now buy everything from low- carb pasta, soups and bread to tomato ketchup, shakes and chocolate. If you decide to follow a low- carb diet such as the Atkins plan, these can add variety to your diet. However, it’s worth bearing in mind that these products can be expensive and many add few other nutrients to your diet. They are also often higher in fat and/or calories than the standard product, making them a less suitable option if you’re trying to lose weight by a more balanced method such as counting calories. Does the Atkins diet have any side effects? Unpleasant side effects can occur with the Atkins diet. To start with, burning fat results in the production of substances called ketones as your body enters a state called ketosis. This can result in bad breath, tiredness, weakness, dizziness, insomnia and nausea. Constipation may also occur as a consequence of avoiding typically high- fibre foods such as fruit, veg, beans, wholewheat pasta, brown rice, wholegrain breakfast cereals and jacket potatoes. When it comes to long- term side effects, many health professionals are concerned that the Atkins diet may have serious dangers. While the high intake of fat, particularly saturates, may increase the risk of heart disease, there are also concerns that the unbalanced nature of the Atkins diet may lead to nutritional deficiencies, which cause health problems in later life. For example, poor intakes of bone- building calcium (found in dairy products) may increase the risk of osteoporosis, while poor intakes of antioxidant nutrients (found in fruit and veg) have been linked with a host of health problems ranging from heart disease and cancer to premature ageing and cataracts. Some experts are also worried that high intakes of protein may cause kidney problems or weaken bones. Are there any other bad points? Because so many foods are off limits, the diet can get very boring with the result that many people give up after a short while. It’s also almost impossible to follow the Atkin’s plan if you’re a vegetarian as nuts, seeds, beans and many vegetables are banned in the early stages. Most experts also believe the Atkins plan fails to teach people about the basic principles of a balanced, healthy diet, which science irrefutably proves can help keep us healthy and free from disease. Any pros? The main positive is that people can lose considerable amounts of weight, really quite quickly and this can be very motivating. The diet also encourages people to cut out most processed carbs and alcohol. Thanks to it allowing plenty of red meat and high- fat butter, cream, cheese and mayo, it’s also the one diet that’s got men talking about the need to lose weight. In many cases, this talk has turned into action, with many men following the Atkins diet in an effort to lose their beer bellies! What do the experts say? The scientific jury’s still out on whether low- carb diets really do burn fat and most experts agree more research is needed to identify the long- term health risks and benefits. The Atkins Diet certainly flies in the face of healthy eating guidelines, which recommend less fat and more fruit, veg and high- fibre carbs. Nutrition experts are particularly worried that the diet may increase the risk of heart disease as it’s potentially very high in fat, especially saturates. Not even revised guidelines for fat intakes from Atkins Nutritionals – the company set up by the late Dr Robert Atkins to sell his products and promote the diet – have helped qualm most health professional’s fears. While the company recommended that no more than 2. Most experts also worry about the dangers of encouraging people to eat less fruit and veg – there’s overwhelming evidence that these foods can protect us from a host of diseases including cancer. Is the diet still as popular as it once was? It seems more of us are starting to serve spaghetti with our Bolognese, roast potatoes with our Sunday lunch and rice with our curries. According to new research, the popularity of the Atkins diet has taken a massive dive in America. The latest figures revealed that in January 2. US were following the diet, but by November 2. Meanwhile, if book sales are anything to go by, it looks like the same is happening in Britain. In December 2. 00. Dr Atkins infamous diet book were just one tenth of those a year ago, when hopeful slimmers bought more than 1. Numerous health scares reported in the press have appeared to turn many people against the Atkins regime and at last we’re beginning to take notice of the concerns of nutrition experts. Revelations that Dr Atkins was obese and suffering from heart problems at the time of his death have done little to help the low- carb cause, even though it was later claimed that these problems were the result of medical treatment. Even at the height of its popularity, a Weight Loss Resources poll in October 2. Department of Health about any potential problems linked to the Atkins Diet. Now it seems, the diet will lose many of its fans before official guidelines can be developed! Juliette’s verdict. From a practical point of view, while fried eggs and bacon for breakfast every day may initially sound tempting, most people will be left craving a piece of toast and a banana within a few days. Feeding the World Today and Tomorrow: The Importance of Food Science and Technology - Floros - 2. Comprehensive Reviews in Food Science and Food Safety. As indicated above, food processing has evolved from merely a need to preserve foods from the time and location of harvest or assembly until the product reaches the consumer, to possibly complex activities that may include sourcing raw materials and ingredients from different parts of the world that can improve nutritional and other desirable qualities for better overall health and wellness of consumers. Objectives of food processing. Food processing frequently serves multiple objectives. For example, freezing or cooking and freezing both preserve and provide convenience. Heating or fermentation of soy is necessary both to achieve edibility and to remove the hemagglutinens that would be mildly toxic. Processing operations are conducted under controlled conditions to ensure that the process is completed in the most effective and efficient manner. The resulting products include ingredients delivered to food manufacturers to be used in producing foods for consumers, as well as ingredients (for example, flour) for consumers to use in food preparation. ![]() ![]() The development and implementation of new technologies enhances food quality and safety. Processing is accomplished by using one or more of a range of operations, including washing, grinding, mixing, cooling, storing, heating, freezing, filtering, fermenting, extracting, extruding, centrifuging, frying, drying, concentrating, pressurizing, irradiating, microwaving, and packaging. The formulation, processing, and packaging of a food or beverage is accomplished for several clearly definable purposes, with numerous benefits to the consumer and society. This is the oldest and perhaps still the most common purpose, and the one most familiar to consumers. The purpose of preservation is to extend the shelf life of a food or beverage. ![]() ![]() ![]() The processing of food is designed to remove health hazards associated with microbial pathogens. Processing operations dealing with raw food materials or ingredients carrying pathogens have significant controls and regulations to detect and inactivate food- borne microorganisms that can cause illness. Pasteurization of milk is just one of many examples of processes that eliminate a health hazard for the consumer and extend the life of the product. Managing food safety, however, goes beyond microbiological risks. Good agricultural and manufacturing practices and other principles address chemical and physical hazards as well. In addition, plant breeding has contributed to reduction of some of the toxicants that occur naturally in foods in small amounts (ACS 1. Hall 1. 97. 7) and have been the source of common and sometimes widespread human illness and occasionally death. Processing is, however, still necessary in some instances. For example, manioc must be crushed and soaked—or crushed, heated, and treated with acid—to remove hydrogen cyanide from cyanogenic glycosides before the resulting starch (tapioca) is safe to consume. Processes to ensure the delivery of foods and beverages of the highest quality to the consumer continue to evolve. Quality attributes include taste, aroma, texture, color, and nutrient content. In most cases, these attributes begin to decline as soon as a raw food material or ingredient is harvested or collected. The goal of the processes is to ensure that the decline in quality attributes is minimized. POWER FOODS LIST Fruits Included All fresh, frozen, or canned without added sugar Fruit canned in its own juice (drained) Fruit salad—mixed fruits with no added sugar. For example, blanching and freezing vegetables immediately after harvesting ensures that the nutrients remain at their peak level. In some cases, the quality attributes are enhanced by processing. For example, processing of soybeans greatly improves their flavor. Food processing helps to ensure that the consumer has access to a wide variety of foods and food ingredients at any time, including those that help to improve the retention of quality attributes for the period of time required for delivery of the product to the consumer. For example, controlling the composition of the atmosphere surrounding apples and other fruits leads to extended freshness. Food processing ensures that the resources required to produce raw food materials and ingredients for food manufacturing are used most efficiently. Responding to the goals of sustainability requires the maximum utilization of all raw materials produced and integration of activities throughout all the production- to- consumption stages. To maximize the conversion of raw materials into consumer products, efforts begin at the production stage, with activities to reduce postharvest losses and increase use of by- products. Efforts continue, through food manufacturing and beyond, to ensure that energy, water, and other resources are used most efficiently and environmental impacts are minimized. Refrigeration of fresh produce is an example of an action that reduces loss and increases the edible life of the product. Many processed foods and beverages are developed to allow them to be consumed after limited amounts of preparation. For example, a frozen or refrigerated entree is delivered to the consumer in a form ready for microwave heating. Snack foods are ready to eat when delivered to the consumer. At a fundamental level, food is viewed as a source of nutrition to meet at least the minimum daily requirements for survival, but there is an ever- greater focus on the desire for health optimization from food. Processing can enhance the nutritional value of foods in a number of ways. For example, refining—separation of the antinutritional components—is the best means of improving the nutritional quality of many foodstuffs of vegetable origin, and processing of fresh tomatoes (for example, into catsup) improves the bioavailability of the carotenoid lycopene. Some products are specifically designed to enhance individual health and wellness—the focus of many current trends—requiring specific unique ingredients and an array of processes to ensure desired product attributes. Many products are fortified or enriched with vitamins and minerals (for example, orange juice fortified with calcium for bone health) and other nutrients (for example, margarine enriched with plant stanols and sterols for heart health) in response to defined nutritional needs of consumers. The success of these products—often referred to as “functional foods”—requires that flavor and texture also meet consumer expectations. Typical technologies, processes, and operations. The mechanical operations, processes, and technologies typically used to achieve these benefits in preparing and using raw materials in manufacturing foods and beverages (Potter and Hotchkiss 1. There are many mechanical operations used throughout the food system, including simple conveying of raw materials from one location to another, as well as more intense operations to change the physical structure of the material. All or most of these operations are larger scale versions of operations that have been used to prepare foods for centuries. The cracking and grinding of cereal grains to manufacture the flour used in bakery products is a very visible example. Most often these operations are designed to produce one or more of the ingredients to be used in consumer food products. The extraction of oil from soybeans and other oilseeds requires a mechanical operation before efficient separation of the oil can be accomplished. In most cases, these operations are a component of series of steps needed to ensure the most efficient use of the raw material, often including the manufacturing of an array of by- products for consumers to utilize. Another typical mechanical operation is dry mixing, involving the blending of various ingredients to ensure homogeneous and uniform distribution of the various ingredients before a final stage of manufacturing. The use of thermal energy to increase the temperature of a raw food or ingredient is the most recognized and widely used approach to preservation of food. By increasing the temperature to appropriate levels and holding for an appropriate time that is dependent on both the nature of the food and the objective of the process, pathogenic or spoilage microorganisms are significantly decreased in number or eliminated. Thermal processes applied to foods in food manufacturing are based on the same principles as those governing traditional cooking of foods during preparation. The impact of heating—thermal processing—on components of the food is the same as that during cooking and often results in the enhancement of flavors and texture, as well as some modest losses of heat- sensitive nutrients. Many shelf- stable foods are available to consumers as a result of thermal processing. Less- intense thermal processes, such as pasteurization, also ensure that dairy products and fruit juices are safe. Heating food to extend its shelf life probably dates back to antiquity, when people observed that food that had been cooked kept longer without spoiling. However, it was not until Appert and others investigated heating foods in containers that it was discovered that immediate recontamination of heated food from the environment did not occur. Since those meager beginnings, advances in mathematics, chemistry, biology, and engineering, coupled with their application to food science and technology, have resulted in development of equipment and procedures to optimize the application of heat to foods for the purpose of extending their shelf life and enhancing their edibility (texture, flavor, and visual appearance). There are basically 3 types of heat processes that are applied to food, other than cooking: blanching, pasteurization, and canning. The latter 2 are tightly regulated by federal—and in some cases, state—agencies to ensure proper application of the technology and prevention of food- borne illness. Legends at Chase Oaks .
